How much do I order?
Generally, you order 1 meal per person. If you’re ordering for kids, you may want to consider the age/size of the kids in question. Generally, small children will eat 1 piece of chicken and 1 oz. of tri-tip, so you can figure 1 meal per 2 kids. However, some kids will eat as much as an adult! We recommend that you order a little more than you think you’ll need (someone will always take seconds), rather than risk running out of food due to unexpected guests, or big eaters.
What about changes?
We are VERY flexible. We will call you 2 days before your event to confirm your order and we can make any last-minute changes then (headcount, times, etc.).
Food Quality vs. Pick-Up & Delivery Times
Most people want to get their food TOO EARLY. They order it for pick-up or delivery to coincide with the START of their event. Rarely do people eat at the start of an event. Typically, the scenario goes something like this:

If it is a wedding reception, you also have to figure in the fact that the ceremony ALWAYS runs longer than planned. |
Well, as you can see, if the food was ready 30 minutes before your guests arrived, it has now been sitting there getting cold and dry for several hours.
The Solution
If you are ordering a pick-up, pay for the order with a credit card, then just send your cousin to pick it up. They just have to pull up to the front of the restaurant, skip the line, and come to the side counter - we’ll be ready for them, and get them on their way lickity-split!
If you are having the food delivered, pay by credit card, or have a check already filled out. Assign someone to show the delivery person where the food is to be set up when it arrives. We are quiet, and quick. We will not be a distraction to your party. Just have the 6 ft table or counter top cleared and ready.
Keeping the Food Hot
The food will come right off of our famous mesquite grill, right into foil pans, then covered in foil and placed in a Cambro food warmer. It will be piping hot. If you are picking it up yourself, bring a blanket or quilt, to throw over it in transit (be sure there is plenty of room in your vehicle). This will act as a makeshift warmer. Once you get it to your event, you should not need to place it in warming trays if you plan to eat in the next half hour or so - it holds really well.
